Latin Slaw

½ medium green cabbage, very finely
shredded |
¼ to 1/3 c. chopped fresh cilantro |

3-4 ripe tomatoes, diced |
Juice of 1 lime |

1 large ripe avocado cut in ½-inch cubes |
Salt to taste |

3 to 4 scallions, finely sliced |

Place
the cabbage, tomatoes, avocados and scallions in a large bowl. Sprinkle the cilantro, lime juice, and salt
over the cabbage mixture and gently stir to combine the ingredients. Serve immediately in a large bowl or prepare
individual serving plates. Serves 4.
