Zucchini Brownies

2 cups shredded zucchini |
2
tsp vanilla |

1 1/2 cups sugar |
1/2
cup chopped pecans |

1/2 cup veg
oil |

2 cups flour |
|
|
1 tsp salt |
|
|
1 1/2 tsp soda |
|
|
1/3 cup cocoa |
|
Mix together by hand. Bake in greased 9 X 13
pan at 350 degrees for 30-35 minutes. Frost when cool. (Frosting:
1 stick butter, 4 tsp cocoa, 5
tsp milk, 1 tsp vanilla, 2 cups powdered sugar (or a little
more). These are good at room
temperature, but I like them even better refrigerated. Enjoy!
